We sat down with Chef de Cuisine Joe Denomme of Barlines at the Omni Nashville Hotel to learn more about the Southern-inspired menu at Barlines and what sets his cuisine apart from other Nashville restaurants.
How would you describe the food at Barlines?
Local Southern-inspired fare, made fresh daily and inspired by Music City’s famous honky-tonks.
What is your favorite dish to make on the Barlines menu?
The Bacon Cheddar Burger. It is made with a half pound of local Kentucky beef from our friend Milton at Black Hawk Farms, and topped with Applewood Bacon and Tennessee Sweetwater Valley Cheddar Cheese. We sell thousands of these delicious burgers every month and really pride ourselves on the quality and tastiness of this special burger.
What sets Barlines apart from other Southern comfort restaurants / bars in Nashville?
The amount of time and pride we put into everything we do, along with the quality of ingredients we use, truly set Barlines apart. We boil and peel hundreds of eggs daily for our deviled eggs and cobb salads. We smoke and pull all of our chicken and pork in house daily. We create all of our dressings from scratch. We fry all of our own tortilla chips and potato chips. We make our own salsas by roasting down jalapeños, onions, garlic and tomatoes. We make pizza dough daily for our woodstone roasted flatbreads. There is not a signle item on the menu that is not crafted in house by hand… and with special care!
What is the most unique ingredient that you use in your Barlines dishes?
It’s hard to pick one unique ingredient, as we like to experiment with new flavors all the time. One of our most prized ingredients is our very own, in-house crafted whiskey barreled hot sauce. We bring in 500 lbs of peppers at a time and then ferment, purée and age them in Jack Daniels’ barrels for 4-6 months at a time. We then use these peppers as the base for our Red Hot Wings, which is the Barlines take on a classic buffalo wing. We also bottle it and serve it to tables upon request.
What makes you most proud about leading the Barlines culinary team?
The immense passion that the Barlines culinary team has towards serving the best food possible, day in and day out, truly makes me proud. We have an amazing staff assembled, starting at the top with Executive Chef David Harker all the way down the chain of command. Everyone is truly committed to providing the best in food and experience for each guest that enters our doors.
